As I write this I’m sure many of you have already started your Christmas shopping by hitting the stores for some Black Friday Deals. I love a good sale! However, I love my pajamas more.

I also love a good brunch. So, this year, I think I am going to do Cyber Monday right. I can actually enjoy shopping from the comfort of my computer, have everything delivered right to me, and be able to maybe enjoy a Cyber Monday Brunch with anyone who will join me.

Apple Cheddar Mini Quiche 10

One of the things I will be purchasing this year for Cyber Monday are American Home™ by Yankee Candle®  brand candles at Walmart online. These will make great gifts for hostesses, teachers, and coworkers. They have so many wonderful fragrances like Lovely Lavender, Ginger Pumpkin Pie, and my absolute favorite Fresh Apple that is perfect for an apple themed Teacher gift.

While shopping online, I was able to find the small tumbler candles for $4.93 each, and the fragrance beads for only $3.43 and the large 19 oz two wick candle for $14.93.

Also, for Cyber Monday and a limited time, American Home™ by Yankee Candle® brand is running an awesome deal for two 19oz jar candles in two beautiful holiday fragrances, Balsalm Fir and Sparkling Cinnamon Spice, for just $22 starting November 30. You can check out this great promotion here, and get them delivered right to your door in time to gift them to all your favorite people. You’ll still get to be in your jammies, people.

Don’t you love that I can even turn Cyber Monday into an excuse to drink warm cozy beverages and eat an easy brunch treat while shopping. For this brunch I kept it simple and everything could be eaten with one hand so you could have your other hand free for hunting for deals on your laptop or smart phone. I even created a small hot beverage area complete with tea, cocoa, and marshmallows so my gal pals can have plenty of refills on cozy drinks while they shop.

A recipe that I thought would be fun was an easy and a nod to my favorite Fresh Apple American Home™ by Yankee Candle® brand candles that I will be buying are Apple Cheddar Mini Quiches. They are so easy and so delicious, and perfect combination of sweet and savory.

Divide chopped apple and shredded cheese among muffin cups.

Beat together eggs, milk, salt and pepper until combined. Divided evenly, pour over apples and cheese.

Apple Cheddar Mini Quiche 4

Bake for 10-15 minutes or until set.

Apple Cheddar Mini Quiche 8

I cannot wait to serve these on Monday. I made this video to remind myself of all the steps I used to make them.

These mini quiches would be a great brunch idea for out of town guests staying with you too!

Thirsty Thursday: Apple Whiskey Mule

So, it is officially fall. The Autumnal Equinox happened at 9:29 CST on Monday, and I have been relishing in all the fall glory since. This has always been one of my favorite times of year, but for some reason this year I was counting down the minutes until fall. Perhaps it was because I couldn’t wait to start enjoying all the fall foods, or start wearing my favorite fall clothes, or maybe it is because snuggling on the couch reading books with my littles is one of my favorite things to do. Doing it in the summer is just not the same.

With Autumn comes great drinks, and last year I was all about the hot beverages, but since it is still quite warm out, I thought I would try some cooler refreshing beverages to start out Fall right. So, for this THIRSTY THURSDAY, I am switching up one of my new absolute favorite cocktails, the Moscow Mule, and have created an Apple Whiskey Mule.

Apple Whiskey Mule (makes one)
1/2 of lime juiced
1 tsp sugar
2 oz Irish whiskey
4 – 6 oz Hard Apple Cider (I used Angry Orchard Apple Ginger)
Ice
Apple Slices for Garnish

In a copper mug or glass, add ice to chill.

In a cocktail shaker add lime juice, sugar, whiskey, and ice and shake until well combined (about 30 seconds). Pour into mug or glass and top with cider.

Garnish with apple slices and serve.

Happy Autumn, Readers!

Apple Crisp: An Impromptu Dessert

Last week the temperatures started to plummet and I could tell everyone was kind of getting a bit worn down. So, right before I started dinner I put together the apple crisp and popped it in the oven. When dinner was ready, I took the crisp out of the oven to cool. Right after dinner, I surprised everyone with warm apple crisp and it literally only took about an extra 10 minutes before dinner to put together. Because of our impromptu dessert, I don’t have any pictures (sad trombone).

I guess you’ll just have to make it yourself.

Apple Crisp seems like one of those desserts that tastes, looks, and feels like it takes a ton of work and preparation, but actually I bet you would be surprised to learn that you probably have everything on had already and it only takes a few minutes to put together before baking. Also, with it being autumn, there are so many wonderful kind of apples that are fresh and readily available.

Weeknight Apple Crisp
6 to 8 large apples (I used Honeycrisp) cored and sliced
3 Tbs. granulated sugar
1 tsp. ground cinnamon
1 cup packed brown sugar
1 cup old fashioned oats
2/3 cup all purpose flour
1/4 tsp. salt
1 stick of cold butter cut into small pieces
Vanilla Ice cream for serving

Preheat oven to 350 degrees.

Spray non stick cooking spray in a 9 x 13 baking dish and set aside.

In a large bowl, combine the apples, granulated sugar, and cinnamon and toss until apples are coated with sugar and cinnamon. Put the mixture in the baking dish.

In the same bowl, whisk together brown sugar, oats, flour, and salt until well combined. Then, either with your fingers or with beaters on a very low setting cut the cold butter into the flour mixture until pea size clumps are formed.

Spread the flour and oat mixture over the apples.

Bake for 50 – 60 minutes or until top is golden brown.

Let cool for 15 minutes and then serve with vanilla ice cream.

Anyone else have any impromptu dessert ideas?
