Thirsty Thursday: Peach Bellini (With and Without Alcohol)

‘Tis the season of brunch! If you want my honest opinion, it is always time for brunch, but with Easter almost here and the weather making it easier for us to dine al fresco, brunch is where its at. This week for THIRSTY THURSDAY, I thought I would tackle my favorite brunch cocktail (next to mimosas and bloody mary’s): PEACH BELLINIS. I also thought it would be nice to have two options for guests, so I made both an alcoholic version or a non alcoholic version.

For the non-alcholoic version I used peach nectar, which I must say was not easy to find. If you are having trouble finding it, there several juices at the supermarket such as peach mango or peach berry that would work just as well.

 

Virgin Peach Bellinis (makes 2 large bell inis)
1 1/2 cups frozen peaches
1/2 cup peach nectar or juice
1 can lemon lime soda
(you can add more ice to blender to make it more of a slush consistency)

 

 

In a blender, add peaches, nectar, soda, and ice. Blend until smooth and poor into glasses with a straw. I used Mason jars. Serve with straws immediately.

For the Traditional Peach Bellinis I thought it would be nice to add an additional kick, so I added some Peach Vodka, which can be easily found. Go figure.

Traditional Peach Bellinis (makes 1 cocktail)
2 oz chilled Absolut Peach vodka
2 oz chilled peach nectar
4 oz chilled sparkling wine
Sliced or frozen peaches for garnish

 

In a champagne or wine glass, add vodka and peach nectar. Using a small straw or stirring stick mix the vodka and nectar. Top with chilled sparkling wine. Serve immediately.

Thirsty Thursday: Lemon Strawberry Daiquiris

I am kind of missing the days where I can go out and water my garden in the morning, go for a walk outside without freezing, or sit on the patio and watch the sunset with a cocktail. When I start longing for the warm weather, it helps to make warm weather food like light salads to help me feel in the moment. It also helps to make warm weather cocktails in my new Ninja!

This week’s #THIRSTYTHURSDAY are lemon strawberry daiquiris. These babies aren’t made from a mix, these are fresh with lots of lemon, fresh (or frozen) strawberries to brighten them up, and make you feel like it is 85 and sunny and the grill is fired up and the kids are playing in the sprinkler. Anything that can transform you to warm weather, even for a moment is perfect this time of year.

 

Lemon Strawberry Daiquiris (makes 2)
2 cups of ice
2 Tbs superfine sugar
1 cup fresh or frozen strawberries
1 tsp lemon zest
2 Tbs fresh lemon juice
1-1 1/2 shots of lemon run (I used Bacardi Limon)
1/4 cup lemon lime soda
Combine all the ingredients in a blender. Pulse the blender to gently crush ice, then turn on medium speed for about one minute or until desired consistency.
Pour in pretty glasses and garnish with strawberries or lemon zest.
You can turn on an old HOT movie like Rear Window, and drink these daiquiris and pretend the weather is just a little bit warmer outside!

Thirsty Thursday: Orange Cranberry Coolers

HAPPY THIRSTY THURSDAY!
We only have a few weeks of summer left, so I know that my carefree mornings with the kids are very soon going to come to a close. Once school starts, I know there will be quick breakfasts and running out the door, so I thought I would try and take advantage of these mornings with fun breakfasts and taking some extra time for a treat.
The kids LOVE slushies. I have to say though I am a little skeptical of store bought slushies. So, I have decided to make my own with juice. I have done all kinds this summer, watermelon juice coolers, orange juice coolers, fruit punch coolers, but I think their favorite is orange cranberry coolers.
This is a simple recipe and a great combination of flavors. In fact, my Mom would often put together orange and cranberry juice for us when we would feel a cold coming on.
Orange Cranberry Coolers
1 cup fresh squeezed orange juice
1 cup cranberry juice (Ocean Spray 100% Cranberry Juice)
Ice
Add ice to the blender (about 1 or 2 cups). Next, add juices.
Finally, pule blend until desired consistency.
Serve!
For an adult version of this drink perhaps a smidge of vodka would be in order.

Summer Treat: Banana Chocolate “Ice Cream”

When the kids are watching Disney Channel, I sometimes watch with them. Ok, ok, you caught me sometime I watch without the kids. I cannot help it, I think Good Luck, Charlie is pretty funny for a kids show.

Anyway, sometimes in between shows there is this little cooking segment. I’m not really sure who hosts it, but I do take notice anytime anything cooking related comes on television.

A few weeks ago, I saw them make banana “ice cream.” I couldn’t believe how healthy and simple this “ice cream” was to make. The reason I keep putting “ice cream” in quotes is because there is no cream, milk, eggs, or sugar in this ice cream, but I’m not really sure what else to call this treat. In the thirty second spot on TV, I pretty much got the gist of the recipe and and I could not wait to try it as a summertime treat.

 

As you can see, I did make one change though, I added some chocolate syrup, because let’s face it… everything is better with a little chocolate. However, the chocolate is completely optional, and I think would be great with all kinds of other toppings or mix ins.

Chocolate Banana “Ice Cream”

4 large ripe bananas cut into sliced
2 Tbs chocolate syrup

Put the sliced bananas in a freezer safe container or freezer bag. Put in the freezer for at least 6 hours or overnight.

 

Next, put in a food processor and begin to blend until fluffy consistency is formed.

 

Add chocolate syrup and blend for 10 seconds until well combined. Serve.

 

Suggestions for Other Toppings or Mix Ins
– Sliced strawberries
– Sprinkles
– Chocolate chips
– Almonds
– Pineapple chunks
– Nutella
– Peanut Butter
– Blueberries
– Sprinkle of Cinnamon
